Reverse Sear Filet Mignon with Blue Cheese Sauce
The Filet Mignon, The King of tender steaks. With this recipe we teach you how to achieve edge to edge perfection on this expensive yet luscious cut of beef.
Ingredients:
· 1½"-2" Filet Mignon
Joseph-Que Craft Rubs Dom's Magic Dust (or your favorite Steakhouse seasoning).
· 4 ounces Blue Cheese Crumbles
· 2 TBSP of unsalted butter
· 4 TBSP of Heavy Cream
Instructions:
1) Dry exterior of steak with paper towel and generously apply Dom's Magic Dust or your favorite steak seasoning and set aside.
2) Heat your grill up for 2 zone cooking. One hot direct side and one low heat side. Start your steak over low heat and cook till internal temperature reads 120°. Then sear steak over the high direct heat side to form a nice crust. About 60 secs per side at 500°. Remove from heat and allow to rest.
3) While steak is resting prepare your sauce by melting butter over medium heat. Add cream and blue cheese and stir till cheese is completely melted. Slice steak, drizzle sauce and serve.
