Grilled Buffalo Chicken Meatballs
Whether you’re looking for a lean snack or just another buffaloed recipe to add to your recipe arsenal of buffalo dishes then this dish should take your flavor sensors to the next level. Rich creamy blue cheese is added to the meat mixture with buffalo seasoning and then topped with buffalo wing sauce and more blue cheese. This recipe surely won’t disappoint.
Ingredients
· 1lb Ground Chicken
· 1 cup Panko Bread crumb(more or less depends on texture)
· 1 egg
· 2 tbsp of Buffalo Rub (if you cant find rub add more buffalo sauce to meat mixture)
· 1 cup of Blue Cheese
· 1/4 cup of buffalo wing sauce
· Scallions for garnish
Instructions
1) mix ground chicken, egg, 1/2 cup of blue cheese and buffalo rub then start adding bread crumb slowly till texture isn’t tacky anymore and forms a ball easily.
2) Form balls and the sprinkle a little more buffalo rub on the outside.
3) Smoke balls at 300-350 till internal of 165°.
4) Remove from smoker and drizzle with buffalo wing sauce, reserved blue cheese, and chopped scallions.
